Salsa Cruda

6-8 ripe tomatoes, finely chopped
4 garlic cloves, finely chopped
1/2-1 bunch fresh cilantro leaves, coarsly chopped
3-4 green jalepeno (or serrano) deseeded and finely chopped
1 tsp ground cumin
4 scallions (green onions) finely chopped
1/4 tsp sugar and salt to taste
juice of 1/2 lime

Stir all ingredients together in a glass bowl, adding salt to taste.  Cover and chill until required.
To store, spoon into glass mason jar and this will keep aprox. 2 weeks.
